Asher Acres Peach Cobbler

We made this from from a mixture of the peaches we canned last year, and fresh peaches.

Ingredients

Peach Mixture

- 1 quart canned peaches

- 3 fresh peaches, pealed and sliced

- ¼ cup brown sugar

- ¼ t cinnamon

- ¼ t nutmeg

- 1 t lemon juice

- 1 T cornstarch

- 1 T vanilla

Topping

- 1 cup flour

- ¼ cup white sugar

- ¼ cup brown sugar

- 1 t baking powder

- ¼ t salt

- 6 T chilled butter cut into small pieces

- ¼ cup boiling water

Directions

Preheat the oven to 425

Combine peach mixture in a bowl. Pour into the serving/baking dish of your choice. Bake for 14 minutes.

Combine topping flour, sugars, baking powder, and salt in a large bowl. Use your fingers to blend in the butter. The mixture should be clumpy or resemble corn meal. Stir in water

Drop spoonful’s of the topping on the hot peach mixture

Combine 3 T of sugar with 1 t cinnamon. Sprinkle it over the top of the cobbler.

Cook ~30 minutes until the topping is golden brown
