Stuffed Spaghetti Squash

We eat this as a one course/item meal. It has everything, including the green Brandy requires.

Ingredients

> 1x spaghetti squash

> ½ lb Italian (or other) Sausage

> 2x Green Apples, chopped large

> 1x Medium Onion chopped to preference (we go big on this one)

> 4 cups spinach

> 2 cups shredded mozzarella

> A Ron thought, perhaps 1 jalapeno

> Other veggies as we feel at the moment

> B&Gerk

> Italian seasoning

> Sometimes parmesan or a sharper swiss

Halve the spaghetti squash. Butter and B&Gerk it. Precook it almost 90% done

In a large skillet, brown sausage and caramelize onions. As they are near cooked, add apples, cook to soften. Add peppers, barley cook Add spinach, stir and wilt.

Layer the sausage apple mixture with cheese in the now cooked squash. The final is usually Italian seasoning and parmesan.

Put it in the oven for maybe 15 minutes at 400. Brown the cheese, and pull it out. Serve.
