Mediterranean Rice with Pineapple and Cauliflower

Ingredients
- 2 cups cooked rice
- Head of Cauliflower
- 1 cup crushed pineapple
- ½ cup coconut milk
- ½ t turmeric
- ½ t cumin
- ½ t cinnamon
- Olive oil


Start your rice in the rice maker
Separate cauliflower florets in a bowl. Pour on olive oil to coat the florets. Sprinkle on turmeric, cummin, and cinnamon. Mix thoroughly coating all of the cauliflower. Place on a cookie sheet and bake for 15 minutes at 350.

When the rice is done, add the Cauliflower, coconut milk and pineapple to the rice maker, stir, and let it sit on warm for maybe 10 minutes.
