Red Snapper with Mango and Red Peppers

Ingredients
- Red Snapper filet
- 1Mango – Cubed
- ½ Red Pepper
- ½ Green Pepper
- ½ Onion
- 1 Jalapeno
- ? ¼ cup Coconut Milk? – A suggestion we will try next time

Mix in ~1T Corn starch or flour to thicken
- B&Gerk

Coat the red snapper with B&Gerk. Place it in the oven at 350, cook until it flakes, ~20 min.

Sauté mango, peppers, and onion. We like the veggies crunchy. 5 minutes before serving, add the coconut milk and thicken

Remove the red snapper from the oven, pour over the sauté mixture, serve.
