Leftover Migas

Farm Brunch Sundays frequently includes migas. Migas are the Latino version of frittata or quiche. They are basically egg, tortilla strips, and whatever else you have or want. We use leftovers from Saturday night, so it could be steak, BBQ Chicken (which is REALLY good in Migas), what ever you have

Ingredients
> 12 Eggs
> 6 tortillas cut in strips
> leftovers chopped
> usually caramelized onions
> 2 cups grated cheese
> B&G

Spray or coat your backing dish

In your fry pan with olive oil or butter, precook the tortilla strips until soft, or better yet, just starting to brown. Put them in the baking dish

Make scrambled eggs the way you like. We need them about 80% cooked. These will be added to the baking dish as well. A couple of egg mixture thoughts. If we have leftover ricotta, that goes into the scrambled egg mixture. We also will use 1/2 cup Ranch Dressing as part of the liquid added to the scrambled egg mixture frequently as well.

Fold in the eggs, tortilla strips, your leftovers, and 1/2 cup cheese into the eggs. Smooth and cover with the remaining cheese.

Bake covered for 30 - 40 minutes. I will usually uncover for the last 5 minutes to brown the cheese.
