Shrimp and Sausage Hoopla

Having some bases sauces in the cupboard can make some quick and easy meals as need. For this one, we pull out a quart of the Hoopla Sauce we canned when the tomatoes were far beyond our current needs. Some cans of seasoned tomato sauce from the store are a good alternative if you do not have hoopla on hand

Ingredients

  • 1 quart Hoopla or seasoned tomato sauce.

  • 1 lb shrimp

  • 1 lb sliced sausage (smoked, Italian, whatever your tastes are tonight)

  • 1/2 Onion diced large

  • 1/2 Red Pepper diced large

  • 1/2 Green pepper diced

  • 1 zucchini sliced

  • 1 yellow summer squash sliced

  • Rice

Start your rice. We use a rice maker, so it takes ~40 minutes

Place your shrimp in a bowl, coat with olive oil and B&Gerk

Enjoy a glass of wine or take a 10 minute break.

In a large pot, add your sauce. Now, it will not look like enough, but as you add ingredients, it will grow. Bring to a simmer at medium heat

Add sausage, turn up the heat to medium high. Stir it, get it cooked if it was not already.

Add veggies. Stir some more. We like our with a crunch, so maybe 10 minutes

Add the shrimp. Stir it, get it cooked, maybe another 5 minutes.
Remove from heat and cover.

At this point the rice should be done.
Put your rice in a bowl, a couple ladles of hoopla and server

Some fresh parmesan might be nice
