Mediterranean Rice with Pomegranate and Cauliflower
Ingredients
> 2 cups cooked rice
> Head of Cauliflower
> 1 pomegranate Seeds
> 1 summer squash
> 1 zucchini
> 1 Medium onion
> ½ t turmeric
> ½ t cumin
> ½ t cinnamon
> Olive oil
> 2 T Butter
Start your rice in the rice maker
Separate cauliflower florets in a bowl. Pour on olive oil to coat the florets. Sprinkle on turmeric, cumin, and cinnamon. Mix thoroughly coating all of the cauliflower. Place on a cookie sheet and bake for 15 minutes at 350.
Sautee onion, squash, and zucchini.
When the rice is done, add all of the vegetables and pomegranate to the rice maker, stir, and let it sit on warm for maybe 10 minutes.
